Brauerei zur Malzmühle

In 1901, Hubert Koch's son Jakob Koch took over the brewery, and under his leadership the brewhouse grew into a popular meeting place for Cologne's citizens — especially the well-to-do traders from the neighbouring wholesale market hall. In 1912 he sold the business to his nephew Gottfried Joseph Schwartz, forebear of today's owning family. In 1932 his son Hubert Josef Schwartz succeeded him, running the business until his death in 1944.

In 1945, bombing raids destroyed the Malzmühle; only the old portal survived. Sybille Schwartz resumed production after the Second World War, and the brewhouse was rebuilt. Brewing began again in 1948 — at first, guests still had to be served outdoors. In 1960, Anneliese Schwartz took over the leadership.

Since 2011 the company has traded as Brauerei zur Malzmühle Schwartz GmbH & Co. KG, run by Melanie Schwartz in the fifth generation. In 2013 the "Brauhaus Malzmühle im Historischen Rathaus" opened in the old town hall of Pulheim. In March 2020 the brewery took over the traditional Cologne brewhouse Em Kölsche Boor, where, following renovation, Mühlen Kölsch has been on tap since May 2020.

Because the Heumarkt site had reached the limit of its capacity — most recently 51,000 hectolitres (2021) — and could not be expanded within the city centre, the brewery acquired the Gebr. Sünner brewery in Cologne-Kalk in January 2022 and moved production there. In 2025 the hospitality group sold its Kölsch brand Mühlenkölsch to the private brewery Gaffel, but kept the Sünner brewery along with its associated products.
