Top-fermented, pale, from the slender „Stange": Kölsch is both a beer and a language – served by the „Köbes" in the brewery tavern.
Kölsch is a pale, top-fermented beer with a protected designation of origin – it may only be brewed in and around Cologne. It is served in the slender 0.2-litre „Stange", traditionally balanced by the „Köbes" in a „Kranz" ring; a pencil mark on your beer mat means: bring another.
In the brewery taverns – such as Früh, Päffgen, Gaffel or Sion – it comes with hearty food: „Halver Hahn" (a rye roll with cheese), „Himmel un Ääd" or marinated pot roast.
By the way, „Kölsch" is also the city's language – the only beer you can also speak.
