History
It all began in 1760 with the guild brewer Mathias Lölgen, who first ran the brewhouse on the Eigelstein under the name „Zum Elephanten“. In the 18th century, animal names such as lion, ox, donkey or eagle were popular labels for taverns and brewhouses. Friedrich Brückmann later took over the brewery and, in 1841, renamed it „Zur Stadt Aachen“ to mark the opening of the Rhenish Railway Company's line. After a brief interlude under brewer Nikolaus Eichhoz, Arnold Brentges took over in 1873 and Albert Odenthal in 1879, who gave the house the name „Stavenbräu“ – after the neighbouring lane „Im Stavenhof“.
The Name Is Born
In 1907 Mathias Baum took charge of the brewery and tavern, and since then the house has carried its present name „Em Kölsche Boor“. His son Peter turned the business into a Cologne house brewery in 1912. The name points to the traditional depiction of the Cologne peasant.
From the War to Today
The Second World War badly damaged the building and ended brewing on the premises. In 1953 Gustav Koch bought the ruin from the heirs of Peter Baum and rebuilt the brewhouse – now without its own brewery, but serving the Kölsch of the once-neighbouring Gaffel brewery. From 1983 to 2017 the couple Katharina and Frank Koch ran the establishment, before Christian Frings took over as tenant in 2017. Since 2020 the Brauerei zur Malzmühle has operated the tavern.
Good to Know
Over more than 250 years the house changed names and owners several times – from „Zum Elephanten“ through „Zur Stadt Aachen“ and „Stavenbräu“ to today's „Em Kölsche Boor“. For its 250th anniversary, a marble memorial plaque on the history of the house was unveiled. The tavern also features in Bernd Imgrund's book „111 Cologne pubs you must know“.
